Last week, we showed you how to make your own homemade pizza dough, and this week we’re mixing our love for Italian with Mexican to make pizza quesadillas. That’s right – an ooey, gooey, cheesy quesadilla with pepperoni inside! It should come as no surprise that we’re not afraid to experiment with food.

Our motto during our RV adventure across Europe was to try a dish once before forming an opinion about it…what a great learning experience that turned out to be. It’s allowed the kids to open their minds and not immediately go ‘yuck’ at the sight of food and refuse to taste it. LouLou’s learned that she loves octopus, escargots in France and Morocco are some of her favorite dishes!

We use it all the time, and couldn’t wait to share it. Sometimes we stick to mozzarella, but if we want to switch it up, we add asadero or queso fresco. Don’t be afraid to play around.
